Absolutely the best sushi restaurant on the west coast. Sushi Wasabi in Tustin.
It’s a small hole-in-the-wall shack in a ghetto plaza. I know that a shack probably isn’t the best place to go for fresh raw fish, but trust me on this one.
While the sushi bar is for Omakase only (the sushi chef gives you a selection of his best fish of the day), make sure you get the salmon and blue crab rolls. I bet they are the most popular dishes here.
The fish melts in your mouth. Mr. Katsu’s selection of fresh fish, his preparation of the fish, and his seasoning of the whole plate – the experience is fantastic.
The place is a bit pricey though, expect $60~100/person. Worth. Every. Penny.
